Fancy Nancy – Measured with Love
There is just something about Sunday dinner that calls for good old-fashioned comfort food. And when I can make something delicious without spending the entire afternoon standing over the stove, that’s even better!
This Sunday, I made a double batch of one of those easy, throw-it-together crockpot meals that combines sweet and savory flavors in the best possible way: Apple Pie Stuffing Pork Chops!

We’re talking tender boneless pork chops, brown sugar bourbon seasoning, sweet apple pie filling, and savory herb stuffing. Everything cooks together in one crockpot, making a delicious meal with very little cleanup.
And, of course, we’re measuring with love!
The Ingredients
This recipe makes a double batch, perfect for Sunday dinner or having leftovers for another meal.
For the pork chops:
- 8 boneless pork chops
- Butter for the bottom of the crockpot
- Approximately ½ cup chicken broth
- McCormick Grill Mates Brown Sugar Bourbon Seasoning, measured with love!
- 2 cans apple pie filling
For the stuffing:
- 2 boxes Stove Top Savory Herbs Stuffing Mix
- 8 tablespoons melted butter (1 stick total)
- 1½ cups chicken broth
I used College Inn 40% Less Sodium Chicken Broth, but you can use your favorite brand.

Let’s Get Cooking!
Step 1: Get the Crockpot Ready
Start by adding some butter to the bottom of your crockpot, along with approximately ½ cup of chicken broth.
This gives the pork chops a little moisture to cook in and adds flavor as everything comes together.
Step 2: Season Those Pork Chops
Place your boneless pork chops into the crockpot.
Sprinkle them generously with McCormick Grill Mates Brown Sugar Bourbon Seasoning.
I love how this seasoning works with the apples. It has that wonderful sweet and savory flavor that makes the pork chops especially good.
And how much seasoning do I use? Well, you know the answer to that one!
Measure with love!
Step 3: Add the Apples
Open two cans of apple pie filling and spoon them over the pork chops.
Spread the filling evenly so the pork chops are covered with that sweet apple goodness.
As everything cooks, the apple filling combines with the seasoned pork and creates a delicious sauce.
Step 4: Prepare the Stuffing
In a separate bowl, combine your stuffing mix with the melted butter and chicken broth.
For each box of stuffing, use:
- 4 tablespoons melted butter
- ¾ cup chicken broth
Since I made a double batch, I used two boxes of stuffing, 8 tablespoons of butter, and 1½ cups of broth.
Mix until the stuffing is moistened, then spread it evenly over the apple filling.
There is no need to cook the stuffing separately before adding it to the crockpot.
Step 5: Let the Crockpot Do the Work!
Put the lid on your crockpot and cook on LOW for approximately 3–5 hours, depending on the thickness of your pork chops.
Thinner pork chops will cook faster, while thicker chops may take longer.
Check the pork chops toward the early end of the cooking window. They should reach an internal temperature of 145°F, followed by a three-minute rest.
And that’s it! Sunday dinner is cooking while you go enjoy your day.
Why I Love This Recipe
I love recipes that combine unexpected flavors, and this one does exactly that.
The apple pie filling adds sweetness, the brown sugar bourbon seasoning brings a little extra flavor, and the savory herb stuffing balances everything out.
Plus, the pork chops cook underneath all that deliciousness!
It’s one of those dinners that tastes like you spent hours preparing it, even though the crockpot did most of the work.

Fancy Nancy’s Tips & Tricks
You don’t have to make a double batch. If you’re cooking for a smaller family, cut the recipe in half. Use four pork chops, one can of apple pie filling, and one box of stuffing. Adjust the broth and butter accordingly.
Choose your favorite pork chops. I used boneless pork chops, but you can use bone-in chops if you prefer. Just adjust the cooking time as needed.
Watch the cooking time. Boneless pork chops can dry out when overcooked. Start checking them around the three-hour mark, especially if they’re thin.
Make it your own. If you love cinnamon with apples, try adding a little extra. You could also add chopped pecans to the stuffing for a bit of crunch.
Don’t forget the leftovers! If you make a double batch like I did, refrigerate your leftovers promptly. The pork chops, apples, and stuffing make an easy meal the next day.
What Should You Serve With It?
Since this dish already has your meat, apples, and stuffing, you really don’t need much else.
A side of green beans, roasted carrots, or your favorite vegetable would round out the meal perfectly.
And if you’re like me, sometimes the best Sunday dinner is the one where everything is already in the crockpot!
Measured with Love, Served with a Smile
Cooking doesn’t always have to be complicated. Sometimes it’s about putting a few simple ingredients together, adding seasonings you love, and letting everything cook until it’s ready to share.
That’s what my Measured with Love recipes are all about.
Have you ever made pork chops with apple pie filling? Would you try this sweet and savory combination?
Leave me a comment! I love hearing how other people make these recipes their own.
Until next time, keep cooking, keep smiling, and keep measuring with love!
